What it is
Loose leaf tea brewed to weight, temperature and time. Most tea served badly is simply over-brewed or brewed too hot, which is why we treat a cup of tea with the same recipe discipline as an espresso.
What is included
- Loose leaf, not dust in a bag
- Recipe by weight, temperature and time
- Water temperature controlled per type
- Leaf removed at the end of the steep
- Caffeine-free options available
How it works
Selection
Leaf is bought in small quantities and stored sealed, away from light and odours.
Weighing
Each cup is weighed rather than scooped, so strength does not vary by hand.
Brewing
Water temperature and steeping time are set per type: green, black, oolong or herbal.
Serving
The leaf is removed at the end of the steep so the cup does not turn bitter on the table.
Frequent questions
Why does my tea taste bitter?
Almost always water that is too hot or a steep that ran too long. Green tea in particular should not be brewed at boiling point.
Do you serve caffeine-free options?
Yes. Herbal infusions such as camomile, lemongrass and hibiscus contain no caffeine.
Can I buy the leaf to take home?
Yes, the same leaf we serve is sold by weight at the counter, with brewing instructions.
